Chocolate Date Energy Bites

Directions:

Using a food processor, grind the pecan halves until finely chopped. Add dates to the food processor and blend.

Add the cocoa powder, Sunbutter, vanilla extract, ¼ cup shredded coconut flakes, and salt to the pecan and date mixture in the food processor. Blend until well processed and the mixture begins to resemble a dough.

Roll the mixture into 15 round, 1 1⁄2  inch balls (~19g per ball). Once all the balls are formed, roll them into the remaining ¼ cup of shredded coconut flakes and serve.

They will store well in a sealed container in the refrigerator for up to one week. May also freeze for up to 6 months.

Kids Can Cook Tips: Kids will have fun measuring the ingredients and forming and rolling the balls.
