Directions:

In a medium-sized glass bowl, mix together the garlic, EVOO, vinegar, sweetener, and salt. Whisk to combine until the sweetener and salt are dissolved, then add the herbs.

Place the washed cherry tomatoes on a ½ sheet pan and pour the oil mixture over them. Toss the tomatoes to evenly coat with the mixture.

Bake for 75 minutes at 325°. Remove from the oven and let cool on the pan. Scrape every little juicy bit into a glass jar and refrigerate for up to 5 days. Use on pasta, pizza, scrambled eggs, and more!

Kids Can Cook Tips: Kids of all ages can wash the tomatoes and remove the stems, help measure the olive oil, vinegar, sweetener, salt, and pepper. They can also help remove the leaves from the thyme and oregano, tearing them into pea-sized pieces.
